My favorite source for all kinds of animal-source products:
Moscow Hide and Fur
http://www.hideandfur.com/

They do have a page where they describe how they grade and describe leather, plus what someone else said - one ounce leather is about .4 mm thick. They mostly carry the heavier cow leathers, but they have all sorts of exotic leathers. For anyone doing buckskinning, or other types of costume where you need natural materials, they also have feathers, horns and antlers, furs, teeth, claws, etc. They are located in Moscow, Idaho, USA, and everything they sell is either farmed or legally hunted in the state it came from. We've gotten bear teeth and claws, buffalo horns, and other things from them. They will also send you a letter of origin if you need one for your state (good to have when traveling with the costume).

BTW.....where does one go to find out about leather? Y'know things like how
the thickness and weight are measured and what is good for what. Where to buy
hides and what to look for? Techniques for sewing and care? Is there a good
site?

I'd love to make a leather doublet but don't know how to get what I want.
