I don't think the caffeine has anything to do with the tannin.

I heard that caffeine was the acidic part of coffee or tea, as tannin is with walnut husks. So the suggestion was to use caffeine-free, which would be acid-free, and the better thing archivally. But I only know that I heard this, not that it was necessarily true. I wonder if anyone else has heard the same suggestion.
