The unabridged _Oxford English Dictionary_ describes dove grey as "a warm grey with a tone of pink or purple."

Bear in mind that the meanings of many Victorian color names changed from fashion season to fashion season; and also, different, trendier names were often applied to the same old colors. Color was a marketing point, and fabric manufacturers dreamed up exotic color names like "moon on the desert."

In other words, the OED definition may be about as close to an exact definition as you ever get.
