But WHY? I would think that thread would be just as strong no matter which
direction it was spun. Does it have to do with sewing machines and the way
they are threaded? Do the differences matter for hand sewing as well as
machine?

Sorry this is a little late, but S twist is American made clockwise thread.
Z twist is European made counterclockwise thead. The Z twist is less prone
to tangling and knotting as well as stronger. Mettler and Gutterman come to
mind for good Z twist.
