I don't use the neck gussets in my shirts, but I did have the same problem in the beginning, and my fix was pretty simple. When attaching the band of the collar, I use only about the center 1/3 of the band to gather/pleat the back of the shirt into, whilw the rest goes to the front. This makes the neck opening naturally incline more to the front of the shirt (and person!) I also found it helpful to do a quicky muslin fitting when possible on the person meant for the shirt...
