She can't just wear a doublet. She must wear something to cover the lower  
half of the body. Do you already have trunk hose of something? If you must make 
 
a skirt anyway, it seems to me a gown bodice is easier than a doublet. A gown 
 out of amazing fabric would take less time than a doublet. In many ways more 
 adjustable. Look at a gown that laces up both side back seams....like in 
Orazio  Gentileschi's "Lute Player" ...which is a little past half way on this

Imagine that in a fabulous fabric....with your fabulous sleeves tied on as  
well.
 
Boning could be done with something like Rigelene on a muslin  flatlining. Of 
course I'm thinking you already have a chemise and petticoat  laying around 
somewhere.
 
Anyway, don't discount a gown.
 
There is in Janet Arnold a doublet gown for a small girl [but looks just  
like an adult gown] with hanging sleeves and real sleeves....or at least lacing 
 
holes for real sleeves. But it buttons up right to the standing collar....and  
across one shoulder too if I am remembering  correctly.
