Johann, I'm not sure if you asked this question because you aren't using SCSI disks or because you'd prefer iSCSI if possible. But if using SCSI disks is an option for you and you want to use only the SCSI-3 protocol, there are ways to set devices to use SCSI-3, either globally or on a per-device basis. See "Administering the SCSI Protocol Settings for Storage Devices" in the Sun Cluster Software Administration Guide for the 3.2 2/08 release for information about how to do this:
