  telnet is insecure and is deliberately not installed. Use ssh instead. You
can download a free ssh client for windows as well. Search for "putty" or
"ttssh". If you still want telnet, the package should be called
telnet-server-something.

  Sendmail is very hard to configure, and usually not needed. You need an
MTA (such as sendmail) only if you want your computer to be a mail SERVER
and to accept incoming mail via SMTP. If you just want to download mail from
your ISP use fetchmail. If you DO want a mail server, I recomnmend postfix
which tends to be more secure and more easily configurable.
