Hi Nathan, Just checked out the other eclipse plugin listed - it seems this plugin was integrated into the Aptana solution, so may be better to refer Aptana directly.
Regarding the differences - the best way is to checkout and see by yourself of course. However in short, Aptana's haml/sass editor has no/ poor support for syntax mixtures. In EclipseColorer, ruby inside of haml/sass is parsed and highlighted as ruby code, javascript as a javascript, css as css, etc...
