You can install a graphic mode by simply using the aptitude install xubuntu-desktop or aptitude install ubuntu-desktop However do you really need all the graphical package to manage a server because the more package are installed on a server the more it can become unstable or unsecure. If this computer is also your desktop and you want to also use it as a server to learn more and test stuff, there's absolutely no reason to install ubuntu server just install the desktop version and install the packages you want like.
