You can install a graphic mode by simply using the

aptitude install xubuntu-desktop

or

aptitude install ubuntu-desktop

However do you really need all the graphical package to manage a server
because the more package are installed on a server the more it can become
unstable or unsecure.

If this computer is also your desktop and you want to also use it as a
server to learn more and test stuff, there's absolutely no reason to install
ubuntu server just install the desktop version and install the packages you
want like.

If this machine is a production machine don't use a desktop, use a web
interface such as ebox (ebox-platform which is great to manage small
networks with a web interface)
and access it remotely.
