Captures existed long before set-var, which is a much newer feature than capture. So that's not much of a "benefit" any more, but it may explain one reason you may find examples using capture that could have used variables. As you point out, variables are often much easier to work with. But also, captured headers are easily logged *en bloc* using the %hr and %hs log variables.
