To get the client IP information on the smtp server you will need to configure haproxy to send proxy protocol data and the smtp server to receive it. Postfix supports proxy protocol and you can see at https://www.haproxy.com/blog/efficient-smtp-relay-infrastructure-with-postfix-and-load-balancers/ how it can be implemented. Which smtp server are you using and which operating system are you running it on?
