For one, many Exchange admins don't allow IMAP access to their servers. Secondly, with Exchange you'd also sync your calendar and contact lists as well.

It's really more useful if you're using Exchange for collaboration with colleagues at work, and you want to replicate the functionality of Outlook on your mobile device.
