I think if you're running Server 2008 R2, you can get it to do a lot of
things like WSUS, DNS, Remote Desktop etc. If you're familiar with Windows
7, you would be quite at home with Server 2008 R2.

As for running RAID, depends on what data you have. Important ones would be
RAID 1 or RAID 5 if you have 3 or more drives. Since I only store movies and
TV shows on NAS, it's on RAID 0.
