Edit the file /boot/grub/grub.conf and remove sections like:
title Gentoo
kernel /vmlinuz root=/dev/md6 panic=30 elevator=deadline hugepages=760
title Gentoo (hd1)
root (hd1,0)
kernel /vmlinuz root=/dev/md6 panic=30 elevator=deadline
Usually they're separated by blank lines - remove all the lines for a
single section together or your system may not boot.

There is a txt file that you need to edit. I don't remember the name but
it was pretty straight forward in it's layout.

Hello THG,
I have Ubuntu 10.04 and I'm using GRUB to handle boot along with
Windows. The list of Kernel boot options is exceedingly long. I'm not
sure why, before it seemed like it would crop the list as needed. It
might be because I have the Windows boot loader also? Anyway, I would
like to shorten this list and haven't had much luck figuring it out.
Current config is:
GRUB -> Various Kernels
WIndows boot -> XP / Vista
