OK, so I think I was totally on the wrong track with disk I/O. On Sat evening the symptons returned.
I need this box to be stable by Wednesday when it will be left unattended for nearly 4 weeks so I drastically switched everything off in the bios then started turning things on gradually (takes some time as it normally doesn't lock up until it's been idle for a while. I am now down to just the CPU functions like throttle forward and back which are disabled. It has now been stable since Saturday evening so I am hoping it is something to do with the CPU changing state.
