My primary votes would go for -
Windows XP, Server 2003, Vista on ia32 and ia64 platforms

Secondary votes -
Ubuntu, RHEL/FC, SUSE on ia32 and ia64 platforms

Tertiary votes -
MacOSX, ia32 and ia64 platforms - this would give me a reason to buy a
MacBook Pro :)
