Dear Jeff-- I can find no English translations of the Arukh ha-Shulhan, or of the Nefesh ha-Chayim. I did find a French translation of the latter work (L Ame de la Vie=Nefesh ha-Chayim, LaGrasse, 1986). I don't think you can do much better than to make sure you have all the standard translations of the Mishnah, Gemara, and Midrash rabbah, as well as all the currently available volumes from the Yale Judaica Series, and any text/translation edition from the standard Jewish houses who tend to deal in these (i.e. ArtScroll, Feldheim, JPS, together with the Jewish texts from the "Classics of Western Spirituality" series issued by Paulist Press). Much of the classical literature has, of course, never been translated.
