Try looking in  http://catalog.loc.gov under subject: Hebrew
language--Dialects--Yemen..

There seem to be other headings of this type, for Baghdad, Germany, etc.  A
further subdivision "Texts" is also used.

My Hebrew is not that great,  but I did recognize the word "minhag" in a
couple of titles in records using  this subject heading pattern, which led 
me to
think that these headings might be  relevant to your question, i.e. the 
various
titles might discuss the language  used according to the custom of various
places.
