You might want to look at a book by H.J.Zimmels entitled: "Ashkenazim and 
Sephardim: Their relations, differences, and problems as reflected in the 
Rabbinical Responsa." The book goes far beyond the responsa to discuss 
language, statistics, and customs distinguishing the two groups of 
Jews.  It is still available from Sephardic House books at:
