To those interested in my original post: Artscroll has a book (which I haven't seen) called A Treasury of Sephardic Bedtime Stories, and the collections by Howard Schwartz and Barbara Rush have many tales of Sephardic or Mizrachi origin. But it seems there is no "Sephardic Eric Kimmel." Andrea
