Dear Lisa, In my library, collections of short stories by different authors which are not specifically folklore are placed in 550-557, with .3 denoting "short stories."
Collections of short stories by an individual author which are not specifically folklore are placed in 563. Collections of folklore are placed in 185-196 (depending on category of folklore). If I have an anthology which includes both folklore and non-folklore, I tend to place it in the 55x's, unless it is predominantly folklore. I hope this helps!
