Joan Gremont asked about a general history of the Holocaust, suitable for 
an undergraduate or graduate class. Here are two suggestions:

Holocaust: A History, by Deborah Dwork and Robert Jan van Pelt,Norton, 
2003
A History of the Holocaust, Revised Edition, by Yehuda Bauer, Franklin 
Watts, 2001

Both of these titles are widely used in academic settings.
