Thanks to all who replied to my posting. I had been hoping for a detailed 
reference work, one where (for example) similar verses in Psalms might 
correlate to the Qur'an verses, but alas there doesn't seem to be one. 
 
Three people recommended that I contact Reuven Firestone, who replied: 

                Hi Anne, 
                As you know, a lot has been written on the relationship between 
Tanakh and Qur'an. I think you are interested in the complexity of 
literary/historical relationship. I treat that in my book on the 
Abraham-Ishmael stories: Journeys in Holy Lands. Shari Lowin wrote a great book 
which happens to also be about Abraham called The Making of a Forefather. I 
hope that helps.

                Re: your query on Qur'an and Tanakh, the subject was once the 
domain of Western, often Jewish, scholars of Islam, and there are many early 
studies on the Jewish (as well as , Christian, Roman and Zoroastrian) 
'influences' on early Islam. 

                More recently, a field of comparative research on thematic 
comparisons between the Qur'an and Tanach has developed. A pioneer in the field 
is Prof. Reuven Firestone's Journeys in Holy Lands: The Evolution of the 
Abraham-Ishmael Legends in Islamic Exegesis (SUNY Press,1990) -- which connects 
biblical and Quranic stories with later exegetical interpretations.

                James Kugel, In Potiphar's House, discusses the Quran version 
of the Joseph/Potiphar's wife story

chapter in particular 

                Michael Pregill, now at Elon University, wrote his dissertation 
at Columbia University on the golden calf narrative in the Bible and Qur'an;
