I just bumped in to Hetz's replay in walla! news regarding
StarOffice/OpenOfficee:

claiming that the next version will support mac OS in Hebrew.
As far as I know, offical downloads of OpenOffice are avalible for linux
windows and SunOS only, and not for mac.
There is an unofficial version for macOS, however-
* it is not known if it will be ever an official release [1]
* it is avalible only for the Low level darwin, and not cocoa (a cocoa
version is just at prototype stage at this time) it is not suitible for
most end usess.
* No one seems to know how to enabled Hebrew support in darwin itself.
If there is a way, it will be prettty much a hack.
* the current mac builds are based on old OO builds, which do not
contain Hebrew support.
As my primary OS is mac OSX 10.2.3, a Mac version is close to my heart
and I will be the first to try to run and test it (that is why I joined
OO in the first place).
However, althugh the linux and windows versions are forming nicely, this
is not the case for the Mac version, and IMO it is premature to come out
with such statements as "the next version of StarOffice which is based
on OO will have Hebrew in it's mac version"
Shoshannah, who is busy writing a Hebrew guide for Bugzilla end users in
OOWrite, and keeps bumping into annoying bugs. Will file them later today...

Answer: There is no firm answer to this question. There is a lot of
development to do to finish the port to Mac OS X and Darwin. The more
developers that join the porting team to work on the OpenOffice.org Mac
OS X/Darwin port, the quicker development will proceed. Even after
development is complete there will still need to be testing, bug fixing,
internationalization, and other tasks such as authoring of end-user
documentation. The project is still far away from the bug-free 1.0.1
Final goal, but progress is being made and help is needed to get there
more quickly.
