The environment given to the graphical applications (is different from the shell environment and) is defined in the property list ~/.MacOSX/environment.plist It is an xml file that you can edit with the «Property List Editor» app in /Applications/Utilities folder. Try «open .MacOSX/environment.plist» to open it easily : it should launch the editor.
