*Some* face has been incorrectly customized. You should invoke GNU Emacs with '--debug-init', open a TeX file and try to find the face with the missing foreground value in *Backtrace* buffer. The buffer too might reveal the customization-group. Invoking "M-x customize-group <customization-group>" should allow you to set things correct.
