This is on archlinux, so I ran "grub-mkconfig -o /boot/grub/grub.cfg".
As in the original post, I include the generated /boot/grub/grub.cfg file below, which you can see also shows the correct timeout. AND, note again, that even the boot menu (that appears for 3/100ths of a second) shows the correct timeout, which was 5 seconds in the screenshot I included: [1]https://preview.ibb.co/iT79tp/2.jpg Note that the screen says, "The highlighted entry will be executed automatically in 5s" So it seems really a confounding situation why the boot menu disappears.
