I have made some step-by-step instructions for creating GSL projects with MacOS Xcode (with screen-shots, everybody loves screen-shots), http://www.boyfarrell.com/uncategorised/gnu-scientific-library-and-xcode-31

But yes, sounds like a linking problem, (follow the link).
