Hi Jorge, I've only played around with very small 8-bit Microchip PIC microcontrollers; very different from the sort of things you're interested in, sorry!
Google suggests there are various ARM based development boards that use the GNU tool chain, a few seconds on google points to the following: http://www.openembedded.org/ It says it includes the GSL and has some hardware recommendations for getting started.
