Since I wrote this, I had exactly the same issue on my aunt's and my
boyfriend's computers, both running Trisquel 12. On one, Trisquel was up
to date but Guix wasn't updated for around 2 months, and on the other,
both Trisquel and Guix were not updated for about 4 months.

Then, I tried using the install script to remove guix and reinstall it.
After some time, there are hundreds of error messages when the script is
trying to remove things in /gnu/store. I interrupted it, rebooted, ran
the script again, then it completed without error. I rebooted once more
(in case) before installing guix again, and not seing any error.

I am reporting this here in case it could help someone - which could be
me in the future :)

Cheers,
David.
