Hearth Grilled Chicken  from Michael Chiarello

 (Serves 2-4)

1 Whole Chicken
Olive oil
Your choice of spice rub or herbs
Salt, preferably gray salt
Pepper

Ask your butcher to cut chicken 
into semi-boneless halves. 

Place the grill on middle level 
and preheat over the embers. 

Wipe some oil on the grate. 

Cook chicken skin side down, carefully 
moving it 45 degrees every 5-8 minutes 
to evenly caramelize and crisp skin. 

Turn chicken over and cook 5 minutes more. 

Move grill to top position; finish cooking 
on this level.
