Czech Secret Mashed Potatoes and Gravy


This is what my sister in law does 
to mashed potatoes and I've also 
included her "Special Sauce:


    6 med potatoes
    1 egg yolk
1 1/2 tsp salt
1/2 C all purposed flour

enough milk to arrive at the consistency you want


Boil and drain potatoes thoroughly, run 
the potatoes & then through a ricer or 
hand mash them.  

Add the egg yolk, salt and flour and milk 
to the consistency you like.  

She serves her pretty stiff as a side dish 
with this wonderful gravy:

GINA'S SECRET SAUCE/GRAVY:

  2 Cups    water
  1 Cup     vinegar
  2 onions, sliced
  2 sprigs  parsley
  1 stalk   celery
  2 cloves  garlic, minced
  2 bay leaves, crumbled
1/8 tsp    thyme
  2 TBS    pickling spices
1/2 tsp    powdered ginger
  1 lb     prunes, presoaked 
3/4 Cup    water
  2 Cup beer
  2 TBS lemon rind
  4 slices rye bread, cut into small cubes
  6 gingersnaps
1/2 Cup raisins
1/2 Cup almonds, sliced
  2 TBS lemon juice
1/4 Cup sugar
  2 TNS butter
  2 TBS flour

In the first saucepan:

Combine in a saucepan 2 Cups water, 
vinegar, onions, parlsey, celery, 
garlic, bay leaves, thyme, pickling 
spices and ginger.  

Bring to a boil and cook over med heat 
for 30 minutes. 

Set aside the  #1 saucepan

  In the second saucepan:

Cook the prunes in 3/4 Cup of 
water in a separate saucepan until 
soft, about 25 minutes.  

Drain and reserve the liquid.  

Remove the pits and chop the prunes 
very finely.  

Return the chopped prunes to the 
reserved liquid and add the beer, 
lemon  rind, bread cubes, gingersnaps, 
raisins, almonds, lemon juice, sugar 
and mix well.  

Cook, covered over medium heat for 10 
minutes. 

Also set aside. 

 In the third saucepan:

In another saucepan (now you have 
three) melt the butter and add the 
flour, stirring constantly until brown.  

Gradually add the first pan's contents, 
stirring constantly until the boiling 
point is reached.  

Add the prune and beer mixture and stir 
well.  

Cook for 5 minutes, pour over the potatoes 
or other vegetables or meat. 

WHEW!!!  

Takes awhile to prepare, but delicious and 
yes, lots of flavors. 

She always has this sauce cooking on her 
stove, seemingly......
