If you look at the top center photo on this page, the one with the blue background, it appears to depict a handheld hotknife with a built-in adjustable guide that would set your angle well.

Am wondering if a stainless steel knife blade -- four or more inches long and maybe 1 to 2 inches wide -- would heat up and maintain the heat adequately through the power cycling? Would it hold up, or would it lose its temper and become brittle and break?
