I'm no paint expert, but I'd guess that if you painted before you hit the playa and gave the paint plenty of curing time, you'd be fine. Ideally, you want a low-VOC paint - see http://www.consumerreports.org/cro/magazine-archive/march-2009/home-garden/interior-paints/overview/interior-paints-ov.htm
If you just want a boring finish, your paint stores should all have an area for "mistints". Ask to see the mistints. You'll find plenty of cans with white, beige, brown, blue, and maybe a few more interesting colors. The going rate around PDX is a buck a gallon.
