Howdy Gang...

Ok, so it seems like there's this fantastic thing that I've heard on a number of older recordings of traditional dance music, mostly bourrees and such, from central France... during sets of tunes, there's a very brief pause in the music while someone shouts something, then everyone jumps right back into playing, sometimes the same tune, sometimes a different tune.

Can anyone relieve me of my ignorance and enlighten me regarding this most interesting and phenomenon, which doesn't seem to have carried over to modern dances (at least as far as I've heard)? What is usually being said? Why? (the answer to former question may, by default, answer the latter one)
