When you join a top, you just edge glue the bookmatch pieces under good 
clamping pressure.

You can put a reinforcement on the bookmatched back panel, it is not necessary 
however.

Trying to get a good, clear, even grained top and back anything over 7 inches 
wide is near impossible - I think all larger instruments are mead with joined 
pieces.

As for making them 1/8 inch thick, ifyou don't have a thickness planer you can 
use a good hand plane and cabinet scraper and get a very good result.  These 
tops that I get are almost 1/4 in thicknes, and I take them down by hand (I am 
building my drum thickness sander, though.  What started out as an innocent 
project to build one rebec has now turned into a hobby, darnit).

The 1/4 inch will let you do a semi-carved top, though, so you may want to play 
with that.
