I found it. It's actually: hibernate.org -> Documentation -> Core -> Reference Documentation, and then I believe chapter "5" has all the relevant info.
The DTD also turned out to be a good source of info. The problem is I had been looking for things related to "XML" not things related to "property". I had also been using Google.
