When a hive table is created 'store as compressed' 'store as text' can be used. As a default setting you make a valid point. A counterpoint might be that a new user would rather have text files for easier troubleshooting. Also the performance vs storage factors into your choice, text seems faster then SequenceFile, however that may only be the case in my limited testing.
