Hi Gabriel,
The maven plugin actually does support generating structures for the
datatypes, but has it turned off by default to save space. The
documentation page for the plugin has some more information here:

Looking over the HAPI site, I just realized that the documentation for the
plugin isn't actually linked to from anywhere else, so it's not surprising
that nobody found it. This has now been fixed.
