I've hosted with Win2000 for a few years, and never once had any problems.
Win2003 represents an unknown, and for that reason I'd stick with Win2000
unless you have time to play with it. At my last job they converted a few
boxes from Win2000 to Win2003, and started having performance problems with
MSSQL, but I don't really know the full story.

If you want something that is all but guaranteed to work, go with Win2000.
If you want something that is probably 95% sure to work, go with Win2003, as
the risk of having issues with it is quite small.
