Right, before I start to investigate this problem I thought I'd check first to see if anyone else is having this issue.
My servers are suffering periodic sessions of major lag since the latest updates. Is anyone else noticing this? Running a ping -t to the servers whilst this lag is happening indicates that all is well with the servers.
