I would go for the most cache, and in my opinion for game servers 512KB should be a minimum. There are some P4 models with 1MB that you can get for not much more. I just priced a DELL P4 2.8Ghz with 1MB cache, 1GB RAM, 80GB HD for $1,008.
I would go for a 1MB cache processor if it were me or for an AMD setup I'd use Dual Athlon MP 2800+ Barton core (512KB cache). It wouldn't hurt to get a blazing fast SATA hard drive either and cheaper prices than SCSI.
