I'd probably say if you are running 2 or more game processes (or other reasonably weighty apps) I'd get a dual processor system, if 3 or more I'd personally go for a hyperthreaded system. Some other setups maybe be a bit better "value" wise though.
I think care needs to be taken when looking at cpu usage on hyperthreaded CPUs as some distros seem to report it differently, the benefits of hyperthreading are there when running multiple processes, but you don't actually "have" 4 CPUs so you might think you have more spare cpu power than you really have (and naturally there are other limitations as well, but overall its still a good setup). Definitely helps, and I'd go with a dual xeon setup, just be wary with what you see and think capable of :).
