I bought a supermicro case that came with hot swappable sata drive
trays. In order to get it to work correctly, a separate zero channel
raid controller was necessary, but the finished product was pretty
sweet. Raid 5 with a hot spare.

You don't buy "hot swappable drives". You configure the appropriate RAID array to allow for hot swapping in the even of a drive failure. It's a feature, not a thing. As Matt also mentioned you need the right hardware to accomodate this. Removable hard drive trays and a controller card that support hot swapping.
