Clever idea. I think this is one of those cases where DNAT is a good choice. Something like (untested):
iptables -t NAT -A PREROUTING -s uni-address -p udp -sport 27016 -j DNAT --to-destination myserver:27015
You need to enable forwarding on the server. In /etc/sysctl.conf:
net.ipv4.ip_forward = 1
I've also used a program called udpproxy for stuff like this. I run some Tribes2 servers and sometimes the master servers go down for an extended period. We switch the servers to LAN mode and use udpproxy to make all clients appear to be running on the host itself, which gets around the class B network restriction. Then we hand out the address and port to the regulars in our forum.
