It has to be something configuration wise since others with less beefy
machines are running the same loads.

HOw did you install CentOS?  di you use the minimal install and then add
stuff in?  I always install via minimal install and then yum install
<whatever i need>.  This minimizes the crap that gets installed anyways.

What all do you have running in the background on this machine?  I bet
sendmail is on there maong other things if you did not do a minimal
installation.

 It is the cpu utilization.  I don't believe I had this problem when
the server was running the Windows OS.  I will try different distros
