I cant really answer regarding running hlds on opteron vs xeon. But if you look at running a 'real' server, opteron will outdo xeons. A friend of mine that works on a ISP have moved all their servers running DB (PostgreSQL) to opteron based systems instead of xeon and they are working much faster. And Blizzard have moved from Xeon to Opterons servers for the new WoW servers.
