Nod, most professional teams would agree that very high FPS servers feel better. In the case of NFO and the other high-end GSPs, much of this may stem not from the peak FPS value but rather its stability, and its stability in turn stems from the fact that these servers are put on very low-load, highly tweaked machines and each generally gets its own CPU core. The higher FPS does theoretically help slightly as well, but not to a degree that many players would notice.
The OP here is referring to the GoldSrc engine, which only supports up to 1000fps and scales its tickrate along with the FPS. From 500fps to 1000fps, that means up to a 1ms latency difference in-game. The jump from 100fps to 1000fps is actually quite noticable here, both in terms of scoreboard latency and in terms of how the game plays. The jump from 100fps to 1000fps+ is less noticable for Source-based games because the tickrate stays locked at a maximum of 100hz. The actual hardware and bandwidth costs are the reason for the price premium on the higher-end servers -- they are very expensive to run well. I'd agree that for most clients, and especially for public servers, something like a constant 250fps is more than sufficient.
