I've never done it on centos, only debian but it is all pretty much the
same. I would google "compile a kernel the centos way". Read very thoroughly
for kernel panics suck real bad if you don't have kvm. Once you read the
walkthrough's I would actually recommend using make oldconfig. Then when you
make menuconfig you can just change the kernel frequency.

I have heard mixed opinions about real time kernels but I use one and it is
good for me. Take a look into those as well.
